Chia seed pudding

We all have heard about these miraculous tiny grey seeds called chia. Luckily these seeds can be found in every store and with a very affordable price. Chia is an edible seed that comes from the desert plant Salvia hispanica, grown in Mexico dating back to Mayan and Aztec cultures. “Chia” means strength, and folklore has it that these cultures used the tiny black and white seeds as an energy booster. That makes sense, as chia seeds are a concentrated food containing healthy omega-3 fatty acids, carbohydrates, protein, fiber, antioxidants, and calcium.

When added to liquids, these seeds tend to expand and release a jelly substance that will thicken the liquids and that’s why they give the feeling of satiety.

Being neutral in taste, these seeds could be added in almost everything without altering the taste.

Today I’ve made a chia seed pudding which is gluten free, can be made vegan if you omit the honey and tasty.

Mix to combine; To avoid clumping because the seeds tend to stick together, stir two or three times within 30 minutes. Let it sit in the fridge about 30 minutes or preferably overnight ; Before serving top with fresh fruits such as cherries or strawberries; This pudding can be stored in the fridge for 2-3 days without altering the nutrients.[/lt_recipe]
