Fresh fruit ice popsicles

When summer approaches I begin to feel me, I feel like I’m starting to wake from the lethargy sleep. Let’s face it, winter sucks (except when snowing, that is simply magic). On summer time there’s plenty of fruits, cheaper prices too, there’s the beach, and ice cream, oh, ice creaaaam.

Do your kids ask you ice-cream? And by kids I mean those hiding inside you too . My daughter adores ice-cream. She can devour two pounds not even moving from the couch. Since I’m not sure about the safety of the product used in store-bought ice-cream I try my best to limit buying as much as I can. Lately I found a very easy and economic option to treat my kids, and I mean the fruit Ice-Popsicle. Follow my recipe to make it on your own, but previously get some utensils needed. Use zip top Popsicle bags if you can buy them online or use paper cups and wooden Popsicle sticks and aluminum foil. (I’ve used zip Popsicle bags)

Add water and a sugar in a small sauce pan. Boil until just bubbly and turn off the heat. Let the syrup cool preferably in the fridge; Chop the strawberries and place them in a mixer, add 1/3 of the syrup and mix until pureed; Repeat the process with the remaining fruits; I have used zip popsicle bags that I’ve purchased online. Fill the bags using a funnel. Close the zip and place them in the freezer for a minimum of 4 hours; If you do not have zip bags, use paper cups and ice-cream sticks. Fill 1/3 of the cup. Fix the ice-cream stick in the center using aluminum foil as shown in the picture; Freeze for a minimum of 4 hours and place the cup’s bottom in hot water for 2 seconds to release easily the popsicle.[/lt_recipe]
