Squilla mantis and shrimps casserole with garlic infused toasted baguette

Today I’m going to share a very easy and tasty recipe. Squilla mantis is a type of crustacean similar to the shrimps, but different in taste. They are pretty cheap and very easily found at the fish market. Unfortunately they do not have a lot of pulp, but they taste amazing.

I have prepared this dish as a casserole so you can dip the toasted garlic bread in and enjoy, but if you prefer you can add some linguini pasta to bring this dish to another level;

Pour the white wine and just until evaporated add the diced tomatoes and few tablespoon of water; Cover the pan and let it simmer for about 7 minutes, taking care to add some water in order to avoid burning the tomatoes; While the shellfish are cooking, cut the baguette in slices, drizzle with olive oil each of them and toast them in the oven or toaster. When the bread is ready, cut a clove of garlic in half and rub each bread slice with it; When the casserole is ready, add the chopped basil on top and transfer it to a serving deep dish accompanied with the garlic infused toasted baguette;[/lt_recipe]
