Meet Mandarina

As mentioned here , I promised to you  that this spring you would “meet” my fellow food bloggers. Today, I want to introduce Ejona aka Mandarina. She has been my mentor throughout my blogging journey. I have mentioned Ejona in different posts and maybe you have made an idea of how much I appreciate her.

Hello everybody, I’m Ejona, the blogger behind Mandarina, and I’m happy and honoured to be “Bake my day happy for a day”.

A month ago Nevila invited me to be part of her delicious digital corner with a recipe, and it took me some time to find the one. The challenge was to cook something as special and delicious as all her recipes. So, I started thinking, she loves spices, she loves nuts, and she’s so much into international cuisine. It had to be something related to all the above, but what… It wasn’t that easy 😛 I had no idea what I was going to do, until one day we were part of a tea testing event at Teaspot Tirana together with other fellow bloggers and discovered some dried rose cloves that smelled heavenly. At that moment I knew it should be a recipe with rose petals and pistachios. The circle was getting narrower, I was closer ☺ the first though was a pistachio and rose cake, but I already have something similar in my blog, and I wanted this recipe to be special. Then I thought to make some rolls with pistachio and rose petals, but she already had a jam roll recipe in her blog. Why not make some mendiants, they’re bite-sized, delicious and would be a great addition to the amazing sweets she prepares for different events? Yeap, I found it and it’s easy and delicious. I’m happy and honored to be Bake my day happy for a day, and I hope you enjoy the recipe and my talking/writing.
