School lunch ideas

Did you ever feel like you are preparing the same meal everyday for your kid’s lunchbox? Like the same toast or cold sandwich over and over again? Well, yeah, I’ve been there too, but I do my best not to make the same thing twice ( between us, it has happened quite a lot in fact, but since the kids have not complained we’re ok ☺)

In this post I’d like to share four new non-sandwich ideas that have passed the taste test from my kids. Let me know your feedback if you’ll try one of these.

Spread the mayo in each of them and top with two slices of cheese, ham (two per each tortilla), lettuce leaves (two per each tortilla). Roll and carefully divide in half. Insert toothpick in each of them to prevent from unrolling. Place the wraps in the lunch boxes and add some cherry tomatoes and marinated carrots on the side. Cut the orange in wedges and divide it in half between the boxes.[/lt_recipe]

Baking powder;• 6 tsp. Crunchy peanut butter;• 2 strawberries;• 2 tsp. Chocolate chips;” ]Preheat the oven to 180˚C. In a mixing bowl add the mashed banana, cinnamon, baking powder and the oats. Mix it well with a fork. Grease well 6 muffing holes and divide the batter equally. Using your hand shape them like cups. Bake in the preheated oven for about 30 minutes until golden brown. When baked, remove them carefully and fill each cup with one teaspoon of peanut butter and top three of them with chocolate chips. Top the remaining cups with sliced strawberries. Place three cups in one lunchbox ready to take-off the next day[/lt_recipe]

Corn meal;• 5 tbsp. All purpose flour;• 1 tsp. Baking powder;• 1 tbsp. Finely chopped chives;• 1 tsp. salt;• 2 tbsp. Olive oil;• 4 hotdog sausages sliced in 2 cm thickness;• Lettuce leaves;• Cherry tomatoes;• Cubed cheese;• Apple slices;” ]Preheat the oven to 180˚C. In a mixing bowl mix the milk, egg, olive oil. Mix well the dry ingredients (except the hot dogs) and mix in the wet ingredients. Mix to combine. Grease a mini muffin tray and add a teaspoon of batter in each hole. Insert a slice of the hot dog in the centre and bake until golden brown or approx. 30 minutes. Remove from the tray and let them cool. Prepare the lunchboxes by adding some lettuce, cherry tomatoes, cubed cheese and 6 mini corndog cups. Serve some apple slices on the side; Tip: To prevent from browning insert the apple slices in a lemon water for about two minutes. Remove from the water and pat them dry. Arrange afterwards in the lunchbox.[/lt_recipe]

Baking powder;• 1 tsp. Vanilla extract;• ½ cup sugar;• 120 gr melted butter;• 3 tbsp. Runny honey;• straberries;” ]Preheat the waffle iron (if you don’t own one make them pancakes). In a mixing bowl stir the flour, sugar, baking powder and vanilla extract. On the other side combine the wets, mixing the milk, butter and egg yolks with a fork. Add the wet ingredients to the dry ones mixing just until combined. Gently fold in the egg whites being careful not to overmix. Pour ¼ cups fromt he batter to the waffle iron and bake for about 8 minutes. Repeat this step until the batter is finished or just cover the bowl with cling film and make pancakes the next day. Place three waffles per lunchbox and top with honey and sliced strawberries; Don’t forget to precut the waffles for your kids and insert a wet napkin in the bag.;[/lt_recipe]
