Homemade Caramel and oat bars

It has been a long time since my last post in this blog. Of course I did not forget, I have been terribly busy this month. Moreover my PC broke so I had to wait until it got fixed.

Since I’m back, I want to start this year with sweet recipes; therefore I want to take this opportunity to wish every one of you a Sweet and Delicious year.

The recipes I’ll be sharing are the treats that were exposed to one of the Christmas houses on Skanderbeg Square this December, starting with the very first recipe, my last minute invention , Caramel and Oat bars.

First of all, start preparing the caramel sauce and store the leftover sauce (if not finished with a spoon) in an airtight container.

[lt_recipe name=” Homemade Caramel and oat bars” servings=”12 bars ” prep_time=”5M” cook_time=”20M” total_time=”25M” difficulty=”Easy” print=”yes” image=”https://bakemydayhappy.com/wp-content/uploads/2018/01/kek-me-karamel-dhe-tershere.jpg” ingredients=”;  Cake batter : ;• ½ cup caramel;• 70gr softened butter;• 2 eggs;• ½ cup brown sugar;• ½ cup white sugar;• 1 cup rolled oats;• 1 ¾ cup flour;• ½ tsp. baking powder;• 1 tsp. amaro disaronno (optional);• ½ tsp. salt;;  Caramel Sauce : ;;• 120gr butter ;• 1 can sweetened condensed milk;• 120 gr white sugar;• vanilla extract (optional);; Topping: ;• 60gr softened butter ;• ¾ cup flour;• 1 cup rolled oats;• ¼ cup brown sugar;• ¼ tsp. baking powder;• ¼ cup chocolate chips;;;” ] Preheat the oven to 180 C; In a mixing bowl combine the softened butter with eggs and sugars until well blended; Add the amaro, flour, oats, baking powder and salt and ix well; Line a 25x25cm baking tray with parchment paper and layer the dough evenly using a spatula. Don’t worry if the batter is a bit thick, this is how it should be. It resembles more of the cookie dough than a cake. Bake the cake in the preheated oven for about 15 minutes;While the cake is baking start making the caramel;Pour the sugar in a small sauce pan and let it cook until amber in color. Add the butter and mix quickly.After the butter has melted add the sweetened condensed milk and the vanilla. Stir until the sauce get thickened and starts separating from the pan. Set aside to cool a bit;Now that the caramel is done, continue prepping the topping. Add all the topping ingredients in a mixing bowl and mix it using your hands until it forms medium crumbles;Take the cake out of the oven and drizzle generously with the caramel sauce all over the cake, and sprinkle evenly the topping;Return it to the oven and bake for an aditional 5-7 minutes until golden brown; Turn off the oven and let the cake cool completely before slicing. Insert a knife in a glass filled with hot water and cut the cake in 12 medium bars. Enjoy responsibly :-)[/lt_recipe]
