Pumpkin dinner rolls reinvented

Did I ever mentioned you that I love bread and pumpkin? Oh, yes I did, here and here . Well, I had some leftover pumpkin from Halloween, half of it cubed and stored in the freezer and the rest baked in the oven and pureed for my pumpkin pie. I baked a bit  more pumpkin that I’ve needed and I’ve ended up with 2 cups of leftover pumpkin puree.

So I have decided to make something because I hate wasting food. While chatting with my fellow bloggers Valbona (aka bonbon taste) and Ejona (aka Mandarina) I thought to bake some pumpkin rolls, at 10PM ☺.

Taking into consideration the late hour, I decided just to mix up the dough, cover it with cling film and shape & bake it in the morning. The result? Just delicious and ready  for a healthy homemade breakfast.

Using the dough cycle I let the machine knead and turned it off just as it started the proofing setting. I covered the bowl with tight cling film and let the dough rise overnight; Alternatively, if you don’t have a bread machine, knead the dough by hand or standing mixer. The dough will be sticky. Do not add flour;Knead the dough for about 7 minutes to help gluten form. Put the dough in a large container and cover it tightly with cling film and let it rise overnight. It will triplicate its volume and the cling film will prevent it from spilling;The next morning, flour generously the counter top and knead the dough just a few times;Preheat the oven to 190 C;Divide the dough in 16 equal pieces and shape them to form small balls. Make 6 or 7 cuts along the rolls as in the picture and let them rise for about 3-4 minutes, just the time to melt the butter;Bake the rolls in two batches for about 10 minutes or until slightly golden brown. Brush with butter as soon as you take them out of the oven;Serve while still hot with some good quality butter and jam;[/lt_recipe]
