Petanik- A Flaky salted pie with white beans

My origin country, Korça has a lot of savory pies in the culinary tradition. We have two different pies: One called lakror (two-layer pie) and byrek ( with more than 2 phyllo sheets). So about the varieties of filling for lakror, we have with pickled cabbage (called armé), with spring onion, potatoes, onions and tomatoes, flaky pie with beans etc…

Today I will be writing about the latter which is absolutely traditional of Southeast Albania. My mom makes one of the most delicious pies ever, but today you’ll have to see my pics and I promise to make a video of this kind of pie made by my mom.
When we were kids, she used to prepare us a snack made with the boiled beans, pastry sheet, and melted butter. She used to roll it like a burrito and we enjoyed every bite of it.

The only time-consuming part of this recipe is boiling the beans, which you can make them a day ahead or just boil them in a slow-cooker overnight.
If you cannot find thick phyllo pastry sheets, then make the dough yourself using this recipe.

Add salt if necessary; Drizzle some oil in a rectangle baking sheet (30cm x 40cm). Layer one pastry sheet, drizzle with some oil,3-4 tablespoon of beans and some of the liquid. Make sure to spread the beans evenly; Repeat this step until all beans are finished. Cover with the last phyllo sheet wet it all through with the bean liquid (or milk) and add the cubes of butter; Bake for about 40 minutes in 245ºC until golden brown; Remove from the oven, drizzle some water on top to create steam and cover immediately with a kitchen towel.
