Zesty lime cheesecake

I love baking desserts, or better say baking in general (hence the name of my blog-Bake My Day Happy), but almost all desserts that I bake have a reduced amount of sugar. Some months ago I had bought a few limes that were juicy and I thought to use them in baking. When I made a lime juice cheesecake at home, everyone  literally devoured it within the evening ( me included). So since it was a success I’ve decided to share it in my blog

[lt_recipe name=”Zesty lime cheesecake ” prep_time=”5M” cook_time=”40M” total_time=”45M” difficulty=”Easy” print=”yes” image=”https://bakemydayhappy.com/wp-content/uploads/2017/10/lime-cheesecake2.jpg” ingredients=”Base:;1 pack of digestive cookies or petite beurre;100gr butter;Filling:;600gr cream cheese;120ml sour crème;2 large eggs or 3 medium;zest and juice of three limes or 100ml juice;¾ cup sugar;3 tbsp. lemon jam or orange jam;” ]Preheat oven to 200◦C;To prepare the base, crush the cookies in the mixer or alternatively put them in a zip bag and crush them using a rolling pin;Melt the butter and add it to the crushed cookies;Add the crumbs to a square baking tray 25cmx25cm and pat it evenly including the sides of the tray; In a mixing bowl add all the filling ingredients and mix them well with a handheld mixer or a whisk until smooth;Pour the filling over the base and bake it in the preheated oven for about 40 minutes or until set but jiggling in the middle;Remove from the oven and let it cool entirely after baking;Spread the jam in a thin layer and transfer the cheesecake in the fridge to chill properly;[/lt_recipe]
