School lunchbox- Week 2

School has started this week and the so it is my Lunchbox ideas session.

I am directly jumping to the second week of school since the first just flied away ☺.

As promised, every Saturday I will be sharing 5 different ideas of how to compose your kid’s lunchbox.

My first advice is to sit down and discuss the list with your kids, you may be amazed of how many ideas you can get from them.

The following combinations are based on my kids taste buds. I really hope they can fit as well in your kids preferences. Otherwise you can adjust them according to your picky eaters

Serving 1 person

Day 1

Sandwich, grapes and cucumber sticks

For the sandwich:

  • 1 small sandwich bun
  • 1 tsp. mayo
  • 1 slice of chicken ham
  • 1 slice of emmental cheese
  • 1 lettuce leaf or arugula

After assembling the sandwich, wrap it tightly in cling film and put it in the lunchbox. Apart of the sandwich pack some grapes and cucumber sticks. Store the lunchbox in the fridge.

Day 2

Chicken “fingers”, apple slices and  1/2 corn on the cob

  • 1 chicken fillet sliced in thick strips (hence the name fingers ☺)
  • 1 beaten egg
  • 3 tbsp. flour
  • 5 tbsp. bread crumbs
  • Vegetable oil for frying

Season the chicken, roll each finger in flour, then in the egg and lastly in bread crumbs. Repeat this step twice. Fry the chicken in very hot oil. Place the fried chicken over a kitchen towel top drain the excess oil.

Place the chicken fingers in the lunchbox.

Add in the box some apple slices and 1/2 corn on the cob or any other veggie if you can’t find the corn. Store the lunchbox in the fridge.

Day 3

Peanut butter banana rolls , marinated carrot sticks with salt & lemon, soft cheese slices

Spread a thin layer of peanut butter over a tortilla, (approx. 2 teaspoons). Place a banana and roll it tightly. Cut into bite size portions, approx. 5cm thick and arrange them carefully in the lunchbox. Add some sliced carrots marinated previously with salt & lemon juice or you can add cucumber and pepper stick like in my case. Add also some soft cheese cubes and store the lunchbox in the fridge until next morning.

Day 4

Easy ham and feta toast, green salad and some jujube fruit (also known and Chinese dates)

  • 2 bread slices
  • 1 teaspoon mayo
  • 1 slice of feta cheese
  • 2 strips of red pepper (pickled)
  • 1 slice of ham

Spread a thin layer of mayo over both bread slices. Arrange the ham, feta cheese and pickled pepper over the toast slice and top with the other bread slice. Bake the sandwich in the toaster and then wrap it in aluminium foil. this will keep the sandwich moist and soft until next morning. Coarsely chop the salad and season with salt. Pour the dressing over the salad only in the following morning to prevent a soggy salad. Add some jujube fruit next to it and store the lunchbox in the fridge until next morning.

Day 5

Quesadillas, tomato and cucumber salad, 1/2 nectarine

Prepare the quesadillas following this recipe, cut into small cubes the tomato and cucumber and add some chopped parsley. Add the dressing the following  morning. Store the lunchbox in the fridge until next morning.

 

Quick Tip: just to be prepared ahead, assemble the salad dressing in the beginning of the week. Add the below ingredients in a small jar and shake it well before use.

  • 1/4 cup olive oil
  • 1 tsp. salt
  • 1 tbsp. apple vinegar
