Vegetarian chow mein

When there’s nothing to eat, our favourite to-go plate is vegetarian chow mein. I always have in pantry Chinese egg noodles and mixed veggies in my freezer. Luckily my kids love Chinese cuisine so I am saved ☺.

As you already know, on Sept 07th, I have started pantry challenge so making these vegetarian chow mein was a good option of emptying the pantry and freezer. This is a very versatile dish and you can customise it as per your family’s taste.

I had no defrosted meat the time so I opted for a vegetarian dish, after all it is always a good option to go meatless one day of the week, right?
