Chocolate chip and instant coffee cookies

Since it is Saturday, I’ve decided to bake some cookies, after all, baking makes my day happy right? Luckily I had some good light to my windowsill, so I’ve recorded a short video to show you how to make them.

You can twist the recipe as you wish, like for example you can add walnut ( I would, If I only had some obviously ☺), or dried fruits like orange peel ( Gosh what a match with chocolate), or dried cranberries. Sky’s the limit ☺. The only tip I’m giving to you is choose a good quality butter, that’s the secret.

Add the vanilla extract and egg and stir well. Add the instant coffee and mix to combine; Add half of the flour, baking soda, baking powder, salt and mix well; Add the remaining flour and stir just until combined. Mix in the chocolate chips. Test with your hands if the batter does not stick and keeps the shape; Scoop the cookies onto a banking tray using a small ice-cream scoop. Bake in the preheated oven for about 12 minutes; When the cookies have reached a golden brown color, transfer them carefully to a cooking rack; Store the cookies in an airtight container for about two weeks;[/lt_recipe]
