Yellow wax beans and peas shepherd’s pie

The winter is officially here. Eventhough the temperatures have not decreased yet, it has been rainy week and it is forecasted a wet weekend too. Since we ain’t going to leave the house apparently, I thought to make a warm casserole for our saturday lunch. I have tried this dish a few weeks before and i have to say that may family has enjoyed it, plus it gets ready in less than an hour so mom is happy too 😂.

I have used yellow wax beans (because I had some in the fridge), but you can use green beans too if you prefer.

Ingredients
  • • 2 large potatoes
  • • 2 cups wax beans sliced
  • • 1 cup frozen peas
  • • 200gr italian sausage
  • • half can of plum tomatoes
  • • 3 tbsp. Olive oil
  • • 2 cloves garlic thinly chopped
  • • 1/2 cup pizza cheese, shredded
  • • few fresh basil leaves
Directions
  • Step 1 Peal and chop the potatoes and boil them in salted water until soft and tender
  • Step 2 Preheat the oven to 220 °C
  • Step 3 In a deep oven-safe pan drizzle the olive oil and add the garlic. Let it cook until fragrant, but be careful not to burn it
  • Step 4 Add the italian sausage and chop it roughly with a wooden spoon. Cook the sausage until slightly browned. Add the wax beans, plum tomatoes squeezed with your hand and let it cook for about 3 minutes
  • Step 5 Season with salt if needed and add the frozen peas. Turn the heat off and get back to the potatoes
  • Step 6 Drain and mash the potatoes. Using a piping bag or just a large spoon, cover the baking pan nicely with the mashed potatoes.Bash the basil leaves with some olive oil and drizzle it over the potato mash.Spread the cheese on top and bake it in the preheated oven for about 30 minutes or until golden brown
  • Step 7 Serve while still hot with a mixed green salad
