Easy Homemade Lime Pudding

This Sunday was a lazy day since it was raining cats and dogs. I had absolutely no idea of what to make for lunch and my family (including me) were starving. Everyone of us was craving for something, but none of us knew what it was. So, I opened the fridge and I saw that it was almost empty, apart of some leftover crushed cookies from my lime cheesecake, some milk, 3 sausages standing there alone… and… there were 2 limes standing there and trying to catch my attention (sounds dramatic huh ☺).

Well, I think, the limes got me inspired since not only I’ve cooked up a delicious lime pudding, but also prepared a Shepherd’s pie in no time (I’ll share this recipe later on my blog) and everyone was happy.

Stir to combine;In a mixing bowl add the egg yolk, corn starch, sugar, zest and the lime juice and a tablespoon of cold milk. Mix until well blended;Heat the remaining milk in a saucepan and pour over the egg mixture mixing vigorously. Transfer it to the saucepan and boil until thickened being careful to stir continuously;Prepare 6 serving cups (I used glasses) and fill 2 tablespoon from the cookie mixture at the bottom. Add the cream on top ( 3 tablespoons per cup) and decorate with some of the crushed cookie mixture and some frozen berries;Set in the fridge to chill, approx. 30 minutes[/lt_recipe]
