Zesty lime cheesecake

I love baking desserts, or better say baking in general (hence the name of my blog-Bake My Day Happy), but almost all desserts that I bake have a reduced amount of sugar. Some months ago I had bought a few limes that were juicy and I thought to use them in baking. When I made a lime juice cheesecake at home, everyone  literally devoured it within the evening ( me included). So since it was a success I’ve decided to share it in my blog

Ingredients
  • Base:
  • 1 pack of digestive cookies or petite beurre
  • 100gr butter
  • Filling:
  • 600gr cream cheese
  • 120ml sour crème
  • 2 large eggs or 3 medium
  • zest and juice of three limes or 100ml juice
  • ¾ cup sugar
  • 3 tbsp. lemon jam or orange jam
Directions
  • Step 1 Preheat oven to 200◦C
  • Step 2 To prepare the base, crush the cookies in the mixer or alternatively put them in a zip bag and crush them using a rolling pin
  • Step 3 Melt the butter and add it to the crushed cookies
  • Step 4 Add the crumbs to a square baking tray 25cmx25cm and pat it evenly including the sides of the tray
  • Step 5 In a mixing bowl add all the filling ingredients and mix them well with a handheld mixer or a whisk until smooth
  • Step 6 Pour the filling over the base and bake it in the preheated oven for about 40 minutes or until set but jiggling in the middle
  • Step 7 Remove from the oven and let it cool entirely after baking
  • Step 8 Spread the jam in a thin layer and transfer the cheesecake in the fridge to chill properly
