Jelly rolls with frozen berries
Some times ago I’ve discovered cinnamon rolls on the internet and from that moment on still remains a favourite breakfast option for me. This time I’ve decided to make a new version of rolls, with apricot jam and berries ( blueberries and redcurrants). At first I thought the jam may burn while baking, but it turned out to be pretty fine. I think this is a delicious recipe for a weekend treat accompanied with a glass of milk or a cup of coffee.
For those who don’t have a sweet tooth use butter instead of jam and feta cheese & oregano to replace the berries. For an extra flavour you can add olives too

For the dough:
- 120gr sugar
- 2 1/2 tsp dry yeast
- 250ml milk
- 80gr melted butter
- 2 eggs
- 550-600gr all purpose flour
- ½ tsp salt
- 2 tbsp. apricot jam
- 2-3 tbsp. frozen or fresh berries ( blueberries & redcurrants)
- In a small saucepan slightly warm the milk and sprinkle on top the sugar and dry yeast. Set aside until the yeast is activated and the mixture is foamy.
- In a mixing bowl add the eggs (slightly beaten), melted butter, salt and the yeast mixture.
- Start adding the flour 1 cup at a time and mix with a wooden spoon
- The dough will be slightly sticky as shown in the picture, but continue to knead it (by hand or in a standing mixer) until smooth and elastic.
- Gently oil the mixing bowl and roll the dough to coat it evenly. it will prevent from drying out. Cover the bowl with a damp cloth and let it rest for about 90 minutes or until doubled in size.
- Preheat the oven to 180 ° C. Give the dough a good punch (think of someone you really hate 😂 ) to remove the excess air.
- Roll the dough with a rolling pin and give it a rectangular shape (almost), spread an even layer of the apricot jam and sprinkle the berries on top.
- Roll the dough starting from the long edge gently pressing while rolling. Using a dental floss cut the dough into 12 same-size rolls. One simple trick; roll the dough in a parchment paper and after cutting the rolls slide it gently to a baking tray. This way you’ll avoid a mess in the kitchen.
- Bake the rolls in the preheated oven for 40 minutes or until golden brown.
These rolls are preferably to be consumed within the day, but they’ll keep the same softness the next day if you heat them up for 30 seconds in the microwave.
